It’s Foodie Friday and I’m kicking things off with this week’s food art. It’s not my finest work, but when it comes to my food art, I always try to do 3 things:
- Make it a complete meal
- Make it fun
- Assemble it quickly
It’s not about making a perfect piece of art – it’s about making healthy eating fun. I find my validation in their big smiles and the empty plate. Besides – the kids like the ‘ugly’ looking plates just as much.
“Brave” in a Green Dress
- Whole wheat pasta with homemade bolognese sauce
- Sauteed green beans
- Carrots & potatoes

- Spaghetti squash with Marinara Sauce: It looks like real spaghetti and it might fool you for a second, but it does not taste like pasta, so don’t get your hopes up. It is, however, a delicious meal in itself. After baking the squash, scoop out the insides which will come out in spaghetti like strings and dress it with any sauce you like.
- Mango parfait: Two ingredients. Mangoes (frozen) and almond milk. Mix with an immersion blender and you have a beautiful tasting dessert in under a minute. A big hit with the kids and it couldn’t have been easier to make (the fancy ice cream glasses certainly help).
